Bag End Bed and Breakfast Banana Muffins (V)

Serves: 36 little hobbits or fewer growing hobbits
Prep Time: About 20 minutes
Difficulty: Easy
Description: A tasty snack or satisfying Second Breakfast with a variation sure to be a hit with all your the little Hobbits!
Ingredients
1 cup rolled oats (the old fashioned kind)
1 cup all purpose white flour
2 cups whole wheat flour
1 cup Sugar (or brown sugar)
4 teasthingys baking powder
1 teasthingy salt
1/2 teasthingy nutmeg (optional)
1+ teasthingy vanilla (I like a lot)
3 mashed overripe bananas
1 cup milk
2/3 Cup vegetable oil
2 eggs, slightly beaten
1 bag frozen blueberries (1 lb)
M&M's for sprinkling
**Variation for Hobbit children: Substitute 2/3 cup organic peanut butter (the unsweeted kind that separates) for the oil and substitute 6 oz. (or more) chocolate chips for the blueberries.
Instructions
Preheat oven to 400 degrees F.
Oil bottom only of 36 muffin cups or line with paper baking cups.
In a large bowl combine all dry ingredients, stirring together. In a separate bowl combine all wet ingredients and mix well. Add the wet ingredients to the dry ingredients and combine just until moistened.
At this point add the blueberries or chocolate chips. Fill prepared muffin cups 2/3 full. Sprinkle a few M&M's on the top if you are making the peanut butter and chocolate chip muffins, but be sure to poke them into the dough a little or they won't stay on.
Bake at 400 degrees 18 to 22 minutes until just golden brown. Immediately remove from pan and place on cooling rack.
Freeze separately and store in plastic bag. Can be thawed in microwave for a quick and yummy treat.
